  • 2014 Homestead Cider: East Branch/ Upper Delaware † *     115 cases made,  7.8% abv , 500 ml

Specs (the “objective”): Sharp, off-dry, w/ rich carroty-amber color. Cloudy w/ mild to high effervescence.
Notes (the “subjective”): Bright intense fruit tart then circles under tongue while tannin anchors center pallet.

  • 2012-14 Homestead Cider: Malus Baccata (Siberian Crab)  †   32 cases made,  7.8% abv , 500 ml

Specs: Sharp, dry, red-amber color, hazy, some solids, low to mild effervescence.
Notes: Bright, especially tart and especially tannic. Finishes almost like a red wine with the lingering tannin.
Source: Wild or “ignored” crab-apples from 3 years foraging region b’twn New Paltz, Wurtsboro, & Parksville

  • 2014 Homestead Elderberry Apple                             98 cases made,  7.4% abv , 750 ml

Specs: Tannic, dry, medium acidity.  Deep crimson hue with slight carbonation.
Notes: Woody/ forest aromas mixed berry upfront. Balanced, light body. Chalky and fruity.
Source: 10% elderberry foraged from BashaKill wetlands, 90% unsprayed west Sullivan County apples

  • 2014 Homestead Perry †                                                30 cases made,  6.4% abv , 500 ml

Specs: off-dry, mild to low effervescence.  Light honey color, sediment and very hazy.
Notes: Nose is hard to pin down, farmy/ minerals. Dense pear flavor comes through. Tannic.
Source: True perry pears (aka “choke-pears”) from unsprayed wild trees along the upper Neversink River.

  • 2014 Ginger-Carrot Apple *                                           110 cases made,  8.0% abv , 750 ml

Specs: Dry, dry. Spicy/ tart.  Cloudy, some solids.  Medium carbonation
Notes: Champagne-like with tingling flower & pepper esters.  Bright fruit, faint bitters, unsweetened ginger.
Source: Orange County (NY) apples fermented in contact with Chinatown ginger and carrot.

  • 2014 Appinette  † *                                                            180 cases made,  8.3% abv , 750 ml

Specs: Dry, amber color, medium carbonation, cloudy.
Notes: Grapefruit/ litchi/ rose peddle nose, suspended in mouth by soft bitter end.  Cider and Champagne.
Source: 30% Finger Lake Traminette grape, 70% Orange County (NY) apples 70% (Idared, russets and Spy)

  • 2014 Scrumpy in the GunksTM Bourbon Barrel  80 cases made,  8.5% abv , 500 ml

Specs: Dry and still. Full M/L conversion: buttery with imparted smoke and vanilla from barrel.
Notes: Drinks like a French-style white, less dry and w/ vanilla exhale.

2013 Ciders
Tasting notes as of Sept. 2014. Profiles change w/ age

  • 2013 Homestead Perry †                                             7 cases made,  7.2% abv , 500 ml

Specs (aka “the objective”): off-dry, low effervescence.  Light honey color, sediment= hazy when stirred
Notes (aka “the subjective”): Hits on many spectrums, including floral, farmy, tannic, and buttery, all while driving a determined, sophisticated path.
Source: True perry pears from unsprayed wild trees along the upper Neversink River.

  • 2013-2014 Hemlock Cider  (release 3/2015)                           80 cases made,  6.8% abv , 500 ml

Specs: Off-dry, still to low effervescence.  Light color, with nominal sediment build.
Notes: Straight, properly aged cider but with a subtle citrus-like “Christmas Tree” ending which adds a bitter, floral evergreen note.
Source: 2103 cider from unsprayed local “Homestead” trees, “dry-hopped” w/ 2014 Hemlock shoots, bottled w/ a trace of our maple syrup.

  • 2013 Homestead Cider: Isle Au Haut  †                           29 cases made,  6.9% abv , 500 ml

Specs: Sharp, dry, red-amber color, hazy, some solids, mild to low effervescence.
Notes: Apple in the nose w/ initial malic acid tartness. Goes way over to sultry by the mid-mouth and finishes like a chardonnay
Source: Unsprayed wild and abandoned apples foraged on a 3 day expedition to Isle Au Haut, ME.

  • 2013 Golden Russet Cider  † *                                      64 cases made,  8.0% abv , 750 ml

Specs: Sharp, dry, mild to *high effervescence.  Honey color, clouds of heavy yeast and mineral solids
Notes: Classic cider aroma. Colorful with strawberry-rhubarb, floral, and creamy vanilla notes. Faint hazelnut tannin and slate chalk toward rear.
Source: 100% Golden Russet apples from the Hudson Valley and Sullivan County.

  • 2013 Homestead Cider: Mamakating Hollow  † *        96 cases made,  7.6% abv , 500 ml

Specs: Sharp, dry, honey color, hazy, some solids, mild to *high effervescence.
Notes: Bright tart cherry forward. Bitters midway w/ coconut/ oak notes pierce outside while blueberry sneaks up the middle.  High tannin, expected to age well.

  • 2013 Homestead Cider: Shawangunk Ridge † *           75 cases made,  7.6% abv , 500 ml

Specs: Sharp, semi-dry/dry, amber color, hazy, some solids, mild to *high effervescence.
Notes: Tart apple intro, notes of birch wood and melon, becomes more minerally. Finishes black cherry.

  • 2013 Homestead Cider: Neversink Highlands  †        80 cases made,  7.6% abv , 500 ml

Specs: Sharp, dry, honey color, cloudy, some solids, mild to *high effervescence.
Notes: Crisp and tart beginning adds tropical and farm peripheral notes.  Ends with mature woodiness.  Should age well.
Source: Unsprayed wild and abandoned apples and crab apples from various east Sullivan County locations.

  • 2013 Homestead Elderberry Apple                                98 cases made,  7.2% abv , 750 ml

Specs: Tannic, dry, rich and sharp.  Bright red hue, with very slight carbonation.
Notes: Woody/ forest aromas balanced by sharp florals. Chalky, mineral bitters and apples.
Source: 10% elderberry foraged from Wurtsboro woodlands, 90% unsprayed west Sullivan County apples (Liberty and Spy)

  • 2013 Ginger Apple *                                                         104+ cases made,  6.6% abv , 750 ml

Specs: Spicy/ tart.  Cloudy, some solids.  Medium carbonation
Notes: Champagne-like with tingling flower & pepper esters.  bright fruit acids with faint bitter ending. Unusual: ginger not followed by sweetness.
Source: Orange County (NY) apples fermented in contact with Chinatown ginger and carrot.

  • 2013 Appinette (formerly Traminette Cider) † *     93+ cases made,  8.4% abv , 750 ml

Specs: Dry, floral aroma, light amber color, medium carbonation, cloudy.
Notes: Grapefruit + rose peddle nose, sustained /suspended in mouth by soft bitter end.  Champagne-like.
Source: 30% Finger Lake Traminette grape, 70% Orange County (NY) apples 70% (Idared, russets and Spy)

  • 2012 Homestead Apple                                            30 cases made,  7.6% abv , 500 ml

Specs (aka “the objective”):  Sharp, dry, rich color, unfiltered, lightly carbonated
Notes (aka “the subjective”): Round, viscous, tart, bright and kaleidoscopic: woody, fruity, farmy.
Source: Unsprayed wild and abandoned apples from various Wurtsboro homesteads
(POI: Still the only licensed cider in the U.S. made from wild, foraged, non-commercial apples)

  • 2012 Homestead Pear                                               60 cases made,  7.2% abv , 750 ml

Specs:  Off-Dry, soft tannins, very light acids.  Fair color, lightly carbonated
Notes: Funky start settles to a delicate prolonged finish.  Like the perry pear itself, sophisticated yet farmy.

(POI: Our 2012 Homestead Pear marks the first and only licensed pear cider in the U.S. made from wild, foraged, true perry-pears)

  • 2012 Homestead Elderberry Cider                           40 cases made,  8.4% abv , 750 ml

Specs:  Tannic, dry, rich and cloudy.  Slightly tart, red hue, with light carbonation.
Notes: Woody/ forest aromas, tannin balanced by sharp apple echo.  Unsweetened elderberry= rare treasure
Source: 10% elderberry, 1% sumac berries, 4% huckleberry, 85% apples (all foraged from Wurtsboro woodlands)

  • 2012 Golden Russet                                                   90 cases made,  8.2% abv , 750 ml

Specs (objective): Sharp, effervescent, dry, clear
Notes (subjective): Classic cider aroma + body. Balance of malo-latic creaminess w/ sharp apple viscosity.
Source: Golden Russet apples from the Hudson Valley mixed with small portion of other late-season apples.

  • 2012 Ginger Apple Cider                                              130 cases made,  6.6% abv , 750 ml

Specs: Spicy, mild fruit acids, with faint bitter ending.  Extra Dry and well carbonated
Notes: Champagne-like with tingling flower & pepper esters.  Unusual: ginger not followed by sweetness.
Source: Orange County (NY) apples fermented in contact with Chinatown ginger and carrot.

  • 2012 Traminette Cider                                           90 cases made,  8.4% abv , 750 ml

Specs: Dry, floral aroma, light amber color, full carbonation
Notes: Grapefruit + rose peddle nose, sustained /suspended in mouth, soft bitter end.  Champagne-like.
Source: Finger Lake Traminette grape 30%, Orange County (NY) apples 70%

  • 2011 Homestead Apple Cider                                        28 cases made,  7.8% abv , 750 ml

Specs: Sharp and mildly tannic with a medium-full body. Dry and colorful.
Notes: A kaleidoscope of unusual flavors.  Some woody, some fruity, some farmy
Source: Unsprayed wild and abandoned apples from various Wurtsboro homesteads
(The first and only licensed cider made from wild, foraged, non-commercial apples!)

  • Bourbon Barrel Cider (2010-2011)                               31 cases made,  7.6% abv , 500 ml

Specs: Dry and light bodied.  Full M/L conversion: buttery with imparted smoke and vanilla from barrel.
Notes: Drinks like a French-style white when still, less dry and w/ faint maple exhale when carbonated.
Source: Orange County (NY) Spy, Idared, Empire apples, home-tapped and boiled maple sap.

  • 2011 Ginger Apple Cider                                             83 cases made,  6.6% abv , 750 ml

Specs: Spicy and brisk with a faint tannic ending.  Dry and light bodied.
Notes: Champagne-like with tingling flower & pepper esters.  Unusual: ginger not followed by sweetness.
