“Cider does not begin at fermentation, it does not begin with the milling of the apples, it does not begin in the orchard. To that effect, cider does not end when it is bottled, cider does not end when it is sold, and cider does not end when it is drunk. There is no beginning or end with cider. There are no isolated stages or participants -- it is a loop, not a target. The death of cider (and there almost was one) is when the loop is broken. “
